My favorite part about people now being aware that I can bake is that I often get challenged with new recipes my friends would like to see. Most recently, my friend Emily (https://twitter.com/gimmedatvecchi), an avid bagel lover like myself, challenged me to make an everything bagel cupcake. I have seen everything doughnuts, but am often turned away by the sweetness of them. This cupcake is purely savory.
I was surprised with how much I really liked this. Bagels are amazing, but dense, and the light “cake” of this one allowed me to enjoy what I really came for, the everything seasoning and cream cheese. Overall, I was pretty pleased with this one. Weird your friends out and try it yourself. They won’t see it coming.
I hereby dub this beautiful creation the “Vecchi”.
Bagel Cupcake
- 1¼ cup of all purpose flour
- 1 cup of bread flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1/2 tsp of salt
- 2 eggs
- 2½ tbs vegetable oil
- 1¼ cups buttermilk
Cream Cheese Topping
- 3 sticks cream cheese, softened
- 2-5 tbs milk
- Everything bagel seasoning: (Sea Salt Flakes, Sesame Seeds, Mediterranean Sea Salt flakes, Minced Onion, Minced Garlic, Poppy Seeds, Sesame Seeds, Black Caraway Seeds)
- top with chives, smoked salmon, or your other favorite bagel add-ons!
Instructions
- Preheat the oven to 350. Grease a 12-cup cupcake pan.
- In a large mixing bowl, combine dry ingredients. Mix well.
- In a separate bowl, mix eggs, oil and buttermilk.
- Slowly pour the oil mixture into the dry mixture. Mix with a wooden spoon until all the ingredients are well combined. (The dough will be sticky.)
- Transfer the dough into the cupcake pan and spread it evenly.
- Bake for 20-25 minutes (until the toothpick inserted in the center comes out clean.)
Cream Cheese Topping
- Using your mixer and whisk attachment, beat the cream cheese until whipped.
- Gradually add in the milk until you get your desired consistency.
- Top with everything bagel seasoning.
Sounds weird and yummy at the same time!
