Irish Creme Coffee Cupcakes

You wouldn’t believe it, but I literally just returned from Ireland. I wouldn’t dream of missing St. Patrick’s Day in Boston, so I went a week early to pay my respects to one of my favorite places in the world. Naturally, I also had to pay my respects in the form of a cupcake. These cupcakes capture one of my favorite “irish” things: Bailey’s and coffee. I am sure you have some extra booze left over from this wonderful holiday, and this is a great way to use it up! We topped these off with some Bailey’s truffle chocolate pieces that I just brought back from Dublin for an extra kick.

Irish Cream Coffee Cupcakes


Coffee Cupcakes

  • 1/2 c vegtable oil
  • 1 c sugar
  • 1 tsp coffee extract
  • 1/2 c plain greek yogurt
  • 2 eggs
  • 4 tbs instant espresso (add 2 1/2 tsp water to form paste)
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt

Whipped Bailey’s Buttercream

  • 1 c salted butter, softened
  • 3 c confectioners’ sugar
  • 1/4 c Bailey’s liqueur
  • 2 tbs milk


  1. Preheat oven to 350.
  2. In mixing bowl, combine oil and sugar. Add in eggs and extract. Once combined, add espresso paste and mix thoroughly.
  3. In medium bowl, sift together dry ingredients. Slowly add to wet mixture.
  4. Bake for about 14-17 minutes or until toothpick inserted in center comes out clean.

Irish Cream Buttercream

In a your mixer, cream the butter until it is smooth. Add in the confectioners’ sugar a little at a time alternating with the Irish cream. Add milk as desired for a lighter texture. If icing begins to curdle add more sugar. Beat the frosting on high until it is fluffy.

  1. I love Cake!
    Now that we have that out of the way, I know these will be delicious, but I’m not sure I’ll be able to make the frosting so I was wondering if I could incorporate the Irish cream inside the cake. How would you advise I do that?
    Have I said how yummy these look? 😂 😀
